A real household, ambitious food, and a dinner plan developed under conditions that would not pass peer review.
#insecuriti Kitchen + Bar began with a contradiction: we wanted the kind of food we look forward to on a weekend, but most dinners happen during the week.
With two full-time jobs, five kids, three cats, and schedules apparently created by people who do not speak to one another, we stopped treating every meal as a separate project. We began preparing the useful parts ahead—Flavour Bases, Seasoning Blends, Sauces, Common Prep Packs, and Finishing Touches. We call them Head Starts: real food made flexible enough to survive real life.
That idea now stretches from the greenhouse to the kitchen and onto the page. We grow what we can, prepare what helps, and share the recipes in our cookbook—so comforting, genuinely good food feels possible even when the week has other plans.
But the food is still only part of it. The real point is the people around the table: breaking bread, swapping stories, laughing too loudly, and lingering longer than intended.
If you love it, we’ll act like we knew you would.
If you don’t… we’ll be outwardly offended and inwardly crushed—but we’ll still pour you something and make room for seconds.
When dinner turns out beautifully, we’ll act surprised. If it brings everyone to the table—that is what success tastes like.
